It is simple Physics, all of that Pressurized steam (High pressure) in the autoclave chamber is forced through the vents to the inside of the container (low pressure) and it does so with force. The steam penetrates deep inside of the materials including well insulated ones like carcasses and eggs. The steam has no where else to go except inside ensuring a faster and more desired outcome.
